Quarantine Tip 1: A Monthly Meal Plan

Hi guys. I made a month-long dinner meal plan that is inexpensive, fairly easy to obtain, can fit in an average freezer and refrigerator, will feed a family of four (more if you have younger kids), and doesn’t require you to leave your house.
Maybe it will help alleviate some planning efforts.

Note: Lettuce won’t last a month. Try cabbage or radicchio as a base toward the end of the month. Lettuces also pop up pretty quickly (45 days) in a home garden.

Here’s a lose structure but we don’t stick *exactly* to it the entire time

Sat: Mexican
Sun: Roasted chicken
Mon: Fish
Tues: Vegetarian
Wed: All American
Thurs: Pasta
Fri: Beef

21 Sat: pork carnitas (avocado, crema, mango, lettuce), refried beans, salad
22 Sun: chicken thighs, red potatoes, salad
23 Mon: baked teriyaki salmon, pearl cous cous, green squash
24 Tues: spaghetti squash, quinoa, kale, green onion fritters, salad, Greek yogurt
25 Wed: pork loin, cheddar grits, caramelized onion and mushroom, roasted apple chutney
26 Thurs: eggplant lasagna (ricotta, mozzarella, kale), vodka sauce, pasta
27 Fri: beef burgers, baked beans, red beet eggs, salad
28 Sat: tilapia fish tacos, black bean/grilled pineapple/mango salsa, lime rice
29 Sun: roasted shawarma chicken legs, garlic cous cous, broccoli
30 Mon: panko crusted flounder, asparagus, black rice
31 Tues: vegetable stew, vegetable rue, topped with fluffy biscuits
1 Wed: chicken wings three ways, slow cooked kale
2 Thurs: shrimp ramen with scallions, green beans, carrots, peppers, and bok choy
3 Fri: beef meatloaf, baked potatoes, broccoli
4 Sat: Mexican lasagna (tortillas, salsa, cheese, corn, peppers, refried beans, pulled chicken breast), sour cream
5 Sun: blueberry Dutch baby with lemon whipped cream
6 Mon: Garlic butter baked salmon, edamame, pearl cous cous
7 Tues: roasted dukkah turkey breast, green beans, mashed potatoes, mushroom gravy
8 Wed: zucchini pie, corn salad
9 Thurs: mussels and bucatini, vodka sauce, garlic bread
10 Fri: flank steak, cauliflower, rice pilaf
11 Sat: ground pork enchiladas, Mexican rice
*12 Sun: Easter ham, au gratin potatoes, butter peas, glazed carrots
13 Mon: leftovers
14 Tues: crab cakes, sautéed corn, baked potato
15 Wed: make your own pizzas (basil, mozzarella, pineapple, pepperoni, eggplant)
16 Thurs: spring rolls, edamame 
17 Fri: Denver steaks, spatzle, zucchini 
18 Sat: salsa verde flounder, pineapple salsa
19 Sun: grilled chicken Cesar salad 
20 Mon: scallops and herbes de province grits, salad
21 Tues: fasolatha (white bean and tomato soup), homemade bread, honey
